Flan (Dessert, Multi-national)

FlanIngredients/equipment:

¾ c. sugar
14 oz can of sweetened condensed milk
1 ¾ c milk (2%)
2 oz. Cream cheese
3 eggs
3 egg yolks
2 tsp. Vanilla

Pyrex casserole or pie pan (1.5 quart)

Instructions:
Mix all but the sugar in a blender for 5 min.
Caramelize the sugar in a cast iron frying pan until it gets dark.
Pour caramelized sugar into the 1,5 quart vessel and immediately tilt at 80 degrees so that sugar goes up the sides. Rotate around so that all sides are coated.

Heat oven to 325 degrees (F).  Add egg mixture to caramel-coated vessel and place in a water bath.  Bake for one hour.  Let cool to room temperature.  Place plate over vessel and invert.  The flan will drop onto the plate.  Watch out for excess caramel overflowing the plate.
