Gazpacho (Spain)

Ingredients for 6 persons:

•    200g of dry bread (1-2 slices)
•    400 g de tomatoes (~5)
•    1 or 2 pieces of garlic (depends on how much you like it).
•    5 spoon olive oil.
•    2 spoon red vinegar.
•    1/2 red pepper 1/2 green pepper.
•    1 cucumber
•    1 onion

Instructions:

Put the bread in a bowl with a bit of water (half a glass?) and the oil and salt leave it there for a while (so it will suck the water...).
Take a recipient and add the garlic minced. Add the cucumber cut into pieces, pepper (without the seeds that are inside), onion and tomatoes …all in s pieces (put the tomatoes in boiling water so you can peel the, easily).
Beat all these (hand mixer best, or blender) and add the bread, the vinegar and more salt. Add more cold water depending on the texture and more salt, vinegar or oil if necessary (at your taste)...Is always good to let it sit for some hours and then taste it again and fix it if necessary later on rather than immediately after.
Keep it in the fridge (is better fresh) and you can serve it accompanied with some small pieces of the vegetables that are in the gazpacho so people can put some in their bowls...and also with some croutons.
