Raw Apple Muffins

4 cups diced apples ½ cup sugar
2 eggs, slightly beaten ½ cup oil
2 tsps. Vanilla 2 cups flour
2 tsps. baking soda 2 tsps. cinnamon
1 tsp, salt 1 cup raisins
1 cup dried cranberries 1 cup broken walnuts
Preheat oven to 325 degrees. Grease muffin tins. Place diced
raw apples and sugar in one bowl and set aside. Mix the slightly
beaten eggs, oil and vanilla in another bowl and stir to blend
well. Mix dry ingredients in another bowl. Add the
apples and sugar and the dry ingredients to the egg mixture and blend
well. Stir in the raisins, cranberries and walnuts and stir until
well blended. Fill the muffin tins two thirds full and bake for
about 15 minutes or until done.
Optional: You may add dried cherries, golden raisins or other nuts if you prefer. It’s all good!
