Madeleine's Whatever Cake

I often make this little cake for the Wednesday morning Connections group at International House, and though it's always different, depending on what fruit is in season, the basic recipe is the same.  I use only 1/2 cup of sugar, but taste the batter and add more, if you like.   Its magic is its intense butter flavor from only half a stick.  Have fun experimenting with variations!

Madeleine's Whatever Cake

Preheat oven  350

Melt 1/2 stick butter in pan.

Combine: 
1 Cup Flour
1/2 - 1 Cup Sugar
1 Teaspoon Baking Powder
1/2 Teaspoon Baking Soda
Pinch of Salt

Stir in:
1 Cup Buttermilk (or 1 Teaspoon vinegar/lemon juice in 1 Cup Whole Milk)

Pour batter on top of melted butter without stirring.  Top with 1 Cup Berries or Sliced Fruit in season; sprinkle with Sugar and Cinnamon.  Bake 25-35 minutes or until skewer comes out clean.
